Chocolate Marshmallow Roll

1 cup semi-sweet chocolate chips
3 tbsp margarine
1 cup icing sugar
2 1/2 cups coloured mini-marshmallows
1/2 cup maraschino cherries, chopped
1/2 cup chopped walnuts
Coconut for coating
Melt chocolate chips and margarine over low heat until soft. Remove from heat. Cool slightly. Add icing sugar, marshmallows, well-drained cherries and walnuts; combine. On waxed paper, spread some coconut and pour the mixture onto it. Using the paper, form the mixture into a log roll. Toss a little more coconut on it to ensure the outside of the roll is well coated. Securely wrap the cookie “log” in the waxed paper. Chill well before attempting to slice. Yields 24 cookies.
