O'Brien Potatoes

6 tbsp butter
6 tbsp flour
3 cups milk
salt and pepper, to taste
4 cups potatoes
1/4 cup pimento, chopped
1/4 cup green pepper, finely chopped
3 cups cheddar cheese, grated
Make white sauce with butter, flour and milk. Season to taste with salt and pepper. Stir in 2 cups potatoes in electric skillet; sprinkle with salt and pepper. Pour 1/2 the sauce over the potatoes and sprinkle with 1/2 cup cheese. Add pimento, green peppers and remaining potatoes, season and top with sauce. Sprinkle with remaining cheese. Set dial at 300°F and cook until bubbling. Turn control to 220°F and continue to cook for 30 minutes. Serves 8.
