Bahamian Mac and Cheese

1 pkg macaroni
1/2 cup margarine
1 green pepper, diced
1 medium onion, diced
3 eggs
1 can evaporated milk
1-2 hot peppers (or 4-5 dashes hot sauce)
3 cups cheese, grated
salt to taste
thyme, to taste
paprika
Preheat oven to 350°F. Cook macaroni according to package directions. Drain, but do not let it dry out completely. Let cool for 5 minutes. Add margarine and stir. Let cool for 10 minutes. Add pepper, onions, eggs and evaporated milk; stir. Add thyme, paprika and hot pepper. Add half of the cheese to macaroni mixture; add extra salt and thyme, if needed. If mixture is drying out, add more evaporated milk. Grease a 5x10 baking dish with margarine. Add macaroni mixture and spread out evenly. Spread remaining cheese over top. Sprinkle with paprika. Bake, uncovered, for 25 - 30 minutes or until macaroni juices have evaporated considerably and cheese has melted.
