Chicken Fried Rice

2 cups water
1 cup long grain rice
1/2 lb white chicken
2 sticks celery
1/2 lg onion
2 cloves garlic
1/4 cup soy sauce
Bring rice to boil, simmer for 45 min. Cook chicken in pan with olive oil; add cut up onion & celery & garlic just until veggies are tender as you like. Add cooked rice mix in soy sauce.
