Fruit Leather

2 cups fresh berries
½ cup sugar
Dash of lemon juice
Puree everything in a blender and pour onto a cookie sheet with a silicone liner. Spread fruit mixture evenly and place sheet in oven on lowest setting (usually 150°F) and keep the oven door ajar. Let fruit dry slowly over 2 - 3 hours, until moisture is gone. (Process takes about 30 min. in a convection oven.) Remove sheet from oven and let fruit cool. Slowly peel fruit leather from silicone liner. Tear into bite-sized pieces and store in an airtight container, using wax paper to separate layers.
