Baked Herb-Crusted Cod

2 portions of cod, cleaned and deboned
¼ cup non-hydrogenated margarine
¼ tsp fresh rosemary, minced
¼ tsp fresh thyme, minced
¼ tsp fresh basil, minced
Juice from 1 lemon
Salt pepper, to taste
Butternut Squash Grilled Onions
1 butternut squash
Maple syrup, to taste
Your choice of seasonings, to taste
Large red onion
Extra virgin olive oil
Salt pepper, to taste
Lightly sauté cod in margarine over medium - high heat for about 1 minute on each side. Combine remaining ingredients to form a paste. Top cod with herb paste and place under broiler in oven for about 3-5 min., until a crust forms on top. Serve with pureed butternut squash and grilled onions. Squash: Chop 1 butternut squash and boil until tender, drain and purée in blender. Stir in maple syrup and seasonings to your taste. Onions: Cut one large red onion into rings. Brush lightly with extra virgin olive oil and salt & pepper (to taste). Grill (or sauté) until onions soften.
