Snowballs

1/4 cup butter or hard margarine
1/2 cup evaporated milk
2 cups sugar
2 tbsp cocoa
2-1/2 cups coconut
2 cups rolled oats
1 tsp vanilla extract
Boil butter or margarine, milk and sugar for 3 to 4 minutes; stirring constantly. Add cocoa and stir well. Let cool a little, then add 2 cups of coconut (reserve the remaining coconut for later), rolled oats and vanilla.

Roll into tablespoon sized balls, then roll balls in remaining coconut.

Tip: Batter needs to be rolled while it is warm or the balls may not stick together well. So I keep a bowl of cold water nearby to dip my hands in before rolling each ball. This keeps my hands from getting too hot, and also helps the balls stick together better.
