Butternut Squash Soup with Maple Syrup

2 lbs squash
1/2 cup chopped onion
1 1/2 tbsp grated ginger
1/4 cup butter
1 tbsp sesame oil
8 cups chicken/vegetable stock
1/2 cup maple syrup
Salt and pepper
In a large soup pot, sauté squash, onion and ginger in the butter and sesame oil. When soft, add stock. Bring soup just to a boil; reduce heat and simmer for about 20 min. Remove soup from heat, pour into a blender and purée well. Add maple syrup and season to taste.
