2 1/2 cups flour
1 1/2 cups sugar
1 tsp baking soda
1 tsp salt
1 tsp cocoa powder
1 1/2 cups vegetable oil
1 cup buttermilk
2 eggs
2 tbsp food coloring
1 tsp white vinegar
1 tsp vanilla
Cream Cheese Icing
2 small pkgs cream cheese, softened
4 cups icing sugar
1 cup butter, softened
1 tsp vanilla
Sift together flour, sugar, baking soda, salt and cocoa. In a seperate bowl, whisk oil, buttermilk, eggs, food coloring, vinegar and vanilla. Mix dry with wet ingredients until smooth. Grease pans with a layer of shortening and dust with flour before adding batter. I used 2 square baking pans. Bake at 350°F for 30 mins or until done. To make the icing, slowly mix cream cheese, sugar, butter and vanilla with mixer.
