Apple and Squash Soup

2 tsp vegetable oil
2 leeks, trimmed and sliced
1 apple peeled, cored and diced
2 lb butternut or banana squash, peeled and diced
1 potato, peeled and diced
4 cups chicken stock
1 tsp dried thyme
1 tsp rosemary
1/4 tsp pepper
Salt to taste
Heat oil in a saucepan. Add leeks and cook gently until tender and fragrant. Add apple, squash and potato. Combine well. Add stock, thyme. Puree soup using hand or regular blender. If too thick, add more water or stock.
