Jamaican Pork

1 tablespoon canola oil
1 onion
3-4 pork chops
1 green pepper
1 tablespoon corn starch
1 tablespoon brown sugar
1 teaspoon salt
1 teaspoon black pepper
1 tablespoon white vinegar
1 tablespoon soya sauce
1 can pineapple tidbits
1/2 cup ketchup
1/2 cup water
2 cups Minute Rice
2 cups water
1 tablespoon margarine
Cut up pork chops into cubes. Dice onion and green pepper. Brown pork, onion, and green pepper with canola oil in large frying pan. Next, mix up the corn starch, brown sugar, salt, pepper, vinegar, soya sauce, juice from the pineapple can, ketchup and water in a mixing bowl. Stir for a minute and then pour this mixture in the frying pan with the pork mixture, turn on medium heat and bring to a boil. Then add the pineapple tidbits and simmer for approx. 30 min. While this is simmering, pour 2 cups of water and a tablespoon of margarine in a dipper and bring to a boil. Then remove from heat, pour in 2 cups of minute rice and cover for at least 10 minutes. When the pork mixture is ready, serve the rice in a plate and pour the mixture over the rice. Enjoy!
