Zucchini Pancakes

1 1/2 cups grated zucchini
2 tbsp grated red onion
2 large eggs, lightly beaten
1 tsp salt
6 - 8 tbsp flour
1 tsp baking powder
½ tsp freshly ground pepper
Vegetable oil for frying
Grate zucchini into a bowl using the large holes in a box grater. Stir in onion, eggs and salt. Add 6 tbsp of flour, baking powder and pepper. Add remaining flour if the batter is too thin. Heat oil in a large frying pan over medium heat and drop batter by heaping spoonfuls. Cook pancakes about 2 minutes on each side. Makes about ten 3-inch pancakes.
