Chocolate Mayonnaise Cake

1 cup sugar
4 tbsp Dutch cocoa
1 cup mayonnaise
1 cup lukewarm water
1 tsp baking soda
2 cups flour
1/2 tsp vanilla
Hot Fudge Chocolate Sauce
2 tbsp butter
4 tbsp Dutch cocoa
1/3 cup hot water
1 cup sugar
3 large tbsp corn syrup
1/4 tsp salt
1/4 tsp vanilla
Mix dry ingredients together and add water, mayonnaise and vanilla. mix well. Bake in lightly greased 9 x 9 pan for about 30 minutes at 350°F. Stir sauce ingredients together in a small saucepan and bring to a boil on medium heat, simmer 5 minutes, keep warm. Drizzle over cake, but be sure to put ice cream in the middle . This recipe can be doubled or quadrupled.

This makes a light spongy cake - not too sweet for the hot fudge sauce. I had no corn syrup on hand so I made my own: 1/2 cup sugar + 1/4 cup water brought to a boil. Cook on med-high heat for about 5 min until sugar is totally dissolved. Stir constantly. Remove from heat and let cool to room temp before using in sauce recipe. I also used light whipped salad dressing instead of mayonnaise.
