Overnight Egg Cheese Casserole

2 cup toasted seasoned croutons
6 eggs
2 cup milk
1 tsp dry mustard
1/2 tsp baking powder
2 tsp seasoning {of your choice}
1/2 tsp oregano
3 tsp parsley
3/4 cup {chopped or grated} cheese
3/4 cup mushrooms or 1/2 cup ham or sausage {chopped}
Spray casserole dish with cooking spray. Spread croutons on bottom of dish. Beat eggs. Add milk, baking powder and dry mustard while beating. Stir until lumps dissolve. Add all other dry ingredients. Pour over croutons and refrigerate overnight. In the morning add ham, sausage or mushrooms {a total of 3/4 cup of all 3 if you wish}. Sprinkle cheese on top. Bake at 375-400°F for 50-60 mins. Serves 8.
