Baked Cod Fillets with Stuffing

2 lb boneless cod fillets
2 cups fine bread crumbs
1 tsp salt
1 tsp pepper
1/4 cup onions, diced
1 tsp summer savoury
2 tbsp melted butter
1/2 cup water
1/4 cup salt pork, finely diced OR 1/4 cup vegetable oil
Cheese Sauce:
3 tbsp margarine or butter
3 tbsp all-purpose white flour
1/4 tsp salt
1/4 tsp pepper
2 cups milk
1/2 cup cheddar cheese, grated
Wash fish and pat dry on paper towel. To make stuffing mixture, combine all other ingredients together except salt pork or oil. Put salt pork or oil in bottom of casserole dish. Add a layer of fish, alternating with stuffing mixture and ending with small amount of stuffing mixture, sprinkled over top. Cover and bake 45 minutes at 350°F. If desired, serve with cheese sauce.
Cheese Sauce:
To make roux, melt butter, whisk in flour, salt and pepper. Gradually, whisk in milk and cook in microwave, stirring frequently, until sauce is desired consistency.

Add grated cheese, stir until melted.

Serve with bake cod fillets with stuffing.
