Baked Salmon

1 whole salmon
1 onion, chopped
2 tbsp melted butter
2 cups bread crumbs
1 tsp poultry seasoning
1 tsp salt
Clean and dry fish; remove head. Make stuffing and sprinkle cavity of fish with salt. Stuff and skewer fish and sew up. Dot fish with butter or strips of fat pork. Wrap in foil and bake 1 hour at 350°F. Open foil for last minute of cooking.
