Pure Labrador Baked Alaska Lingonberry (Partridgeberry) or Cloudberry (Bakeapple) Pie

1 9" baked pie shell
4 oz cream cheese
1/4 cup granulated white sugar
1 litre vanilla ice cream, softened
1 1/2 cups Pure Labrador Cloudberry (Bakeapple) Spread OR Lingonberry (Partridgeberry) Spread
Meringue:
3 egg whites
1/4 tsp cream of tartar
1/3 cup granulated white sugar
Cream together cream cheese and sugar until smooth and fluffy. Fold in vanilla ice cream.

Spread in baked pie shell, wrap and freeze. (This can be stored in the freezer up to 2 months.)

Just before serving, preheat oven to 450° F.


Meringue:

Beat egg whites until stiff and dry.

Combine cream of tartar with white sugar and slowly add to beaten egg whites.

Completely cover frozen pie with meringue, being careful to have it touch all the way around edge of pastry.

Bake in preheated oven until lightly browned.
