Healthier Wedge Fries

3 large baking potatoes
2 Tbsp canola oil
1/4 tsp dried garlic
2 Tbsp grated Parmesan cheese
1/2 tsp chili powder
fresh parsley (optional)
Preheat oven to 375°F. Line a jellyroll pan with foil. Spray foil with cooking spray. Scrub potatoes clean and cut each into 8 wedges, lengthwise. Place on sheet. Combine oil and garlic in a small bowl. Mix cheese and chili powder in separate bowl. Brush the potatoes with half of the oil mixture and then sprinkle with half the cheese mixture. Bake for 20 minutes.Turn potatoes over and brush with remaining oil and sprinkle with remaining cheese. Bake for another 20 minutes.
