Lemon Sauce

Prep Time: Five Minutes
Total Time: 30 Minutes or Less

1/4 cup butter
1 egg (well-beaten)
1 cup icing sugar
1/4 cup lemon juice (or to taste)
Melt butter in top of double boiler. When melted, pour in slowly the egg, stirring constantly to prevent sticking. Add sugar. Stir with whisk to make sure no lumps. Add lemon juice and continue to stir until well-blended. Keep warm in top of double boiler. If sauce thickens before you're ready to use it, slowly add a little water to reach desired consistency.
