Blueberry Pancakes

1/4 cup vegetable oil
2 eggs
3/4 cup plain yogurt
1/2 cup milk
1/2 cup apple juice
1/4 cup liquid honey
1 1/2 cups all-purpose flour
1 1/2 tsp baking soda
1/2 tsp salt
1/4 tsp cinnamon
1 cup blueberries, fresh or frozen (if frozen, do not thaw)
In large bowl, whisk together oil, eggs, yogurt, milk, apple juice and honey. In separate bowl, mix together flour, baking soda, salt and cinnamon. Add to egg mixture and stir just until dry ingredients are moistened. Heat greased griddle over medium heat. Using three tablespoons of batter for each pancake, drop batter onto griddle. Sprinkle blueberries over pancakes. Cook for about 3 minutes or until bottom is golden and bubbles break on top. Turn and cook until bottom is golden brown. Serve with Pure Labrador blueberry syrup.
