Birds in a Nest

1 1/2 cups brown sugar
1 1/2 cups white sugar
3/4 cup melted butter
1 cup milk
3 cups large rolled oats
1 cup unsweetened fine coconut
3/4 cup dark cocoa
12 large marshmallows
Extra coconut for coating
In large saucepan, combine sugars, butter and milk. Bring to a boil and allow to boil for about five minutes until mixture reaches about 225°F on a thermometer. Once it starts to boil, DO NOT STIR. In a bowl, combine oats, coconut and cocoa. Add boiling mixture to dry ingredients. Stir together and let sit until it starts to cool enough to handle. Form balls around marshmallows. Roll in coconut. Let set and store in fridge. Yields 12 large treats.

Have made the recipe for the famous Newfoundland 'Snowballs' that my husband loves - but will give this recipe a try to see how he likes them with the marshmallow centre. I guess they could also be made with a mini- marshmallow in the centre since I don't make the 'snowballs' as large as they are usually made. Mavis in Ontario
