Chipotle Corn Salsa

Total Time: 30 Minutes or Less

1 lb bag of frozen corn, defrosted
2 15 oz cans of Pinto beans, drained and rinsed
1 lb roma tomatoes (approx. 4), seeded and diced
1 bunch of fresh cilantro, chopped
4 scallions (or more, to taste) finely chopped
1 tbsp chipotle paste (or ¼ tsp chipotle powder) or more to taste
Juice and zest from 4 limes
Mix all ingredients together in a large bowl. Flavours will improve on sitting. Stir well before serving.
