2 cups brown rice
1 tbsp olive oil
1 tsp minced garlic
1/2 red bell pepper (or any colour), diced
1/2 medium yellow or red onion, diced
1/2 cup frozen edamame/soy beans
1/4 cup frozen corn
1 cup diced spinach or kale
1 tsp hot sauce
2 tbsp sweet chili sauce
Prepare your rice as instructed on package. Meanwhile, heat frying pan with oil and garlic. Sauté bell pepper and onion for 3-5 minutes, then add frozen corn and beans, and cook for another 5 minutes. Combine spinach and rice in the pan with veggies. Add hot sauce and sweet chili sauce; simmer for 5-7 minutes or until spinach is soft.
