Spicy Tofu Salad

3 cups spinach or lettuce
1/2 red pepper (or any colour), diced
1/2 small English cucumber, cubed
1/2 small tomato
1/2 pkg plain tofu, cubed/diced
1 tbsp hot sauce
1 tbsp chili flakes
Pinch of pepper
Dressing
1/2 cup plain yogurt
1 tbsp hot sauce
Pinch of cayenne
3 tbsp hemp hearts
Combine all veggies in a salad bowl. Heat a little oil in a frying pan; add cubed/diced tofu and cook until heated through (5-10 minutes). Add hot sauce, chili flakes and a pinch of pepper to taste. Add hot and spicy tofu to bowl of veggies.

Dressing: Mix all dressing ingredients, except hemp hearts, in a small bowl and stir well. Toss salad with dressing and sprinkle hemp hearts over top.
