Rocket'sŪ Quinoa Salad

One of Rocket Bakery’s most popular salads!
2 cups quinoa
1 (19 oz) can of corn
1 (19 oz) can of black beans
1 small red onion, diced
1/2 cup toasted pumpkin seeds
1 red pepper, diced
2 tomatoes, diced
1/2 cup fresh cilantro
1/4 cup olive oil
3 tbsp orange juice
2 tbsp lime juice
2 tbsp lemon juice
1 tsp cumin
1/4 tsp cayenne pepper
1 tsp chili powder
salt pepper, to taste
Cook quinoa according to package directions. Cool cooked quinoa (spread it over a baking sheet to help cool quinoa more quickly). Add corn, black beans, red onion, pumpkin seeds, red pepper, tomatoes and cilantro to quinoa and mix well. In a separate bowl, mix olive oil, orange juice, lime juice, lemon juice, cumin, cayenne and chili powder; add dressing to quinoa mixture. Mix well. Season with salt and pepper to taste.
