BBQ Chicken Caesar Salad

2 boneless, skinless chicken breasts
½ cup of your favourite BBQ sauce
4 cups romaine lettuce, washed, drained and chopped
1 cup croutons
½ cup bacon bits
¼ cup Parmesan cheese, grated
2 lemon wedges
2 whole eggs
1 tsp Dijon mustard
1 tbsp garlic, minced
1 tsp Worcestershire sauce
1 tbsp + 1 tsp lemon juice
2 tsp balsamic vinegar
2 shakes Tabasco sauce
1 fillet anchovy
Approximately 2 cups canola oil
Barbecue chicken breasts until they reach an internal temperature of 165°F in the thickest part of the breast. Remove from heat and allow to rest 5 minutes before thinly slicing chicken. Place all dressing ingredients, except oil, in the bowl of a food processor. Turn the machine on “high” and add oil slowly in a thin, steady stream. The mixture will start to lighten and thicken. Once mixture seems so thick that oil will not readily absorb, stop adding oil. Toss lettuce, croutons, bacon bits and cheese in a large bowl. Add enough dressing to lightly coat the leaves of lettuce when mixed. Serve with a wedge of lemon and topped with sliced BBQ chicken breast. Makes 2 large portions.
