Halibut with Pineapple Salsa

6 halibut portions (your favourite cut/size)
1/4 jalapeno, seeded and minced
1/2 orange pepper, finely diced
1/2 small red onion, finely diced
1 cup fresh pineapple, finely diced (if using canned, drain well)
2 tbsp white wine vinegar
2 tsp white sugar
Extra virgin olive oil
Salt pepper to taste
Mix together salsa ingredients - jalapeno, orange pepper, red onion, pineapple, white wine vinegar and sugar - and allow to sit at room temperature until serving time. Brush each side of the halibut with extra virgin olive oil and sprinkle with salt & pepper. Place the fish on a very hot grill, skin side up. Allow the fish to sear well enough that it releases itself from the grill (about 3-5 minutes) and gently flip it over. Cook until the halibut turns a snowy white colour (rather than the translucent you started with), feels firm to the touch and just starts to flake when probed with a fork. Remove from heat and immediately top with salsa and serve. Makes 6 servings.
