Ceviche

1 salmon steak, boneless skinless, diced
1/2 tsp whole grain Dijon mustard
1 tbsp red onion, minced
1 tbsp fresh chives, minced
1 tbsp red pepper, minced
2 tbsp lemon juice
1 tbsp rice wine vinegar
1 1/2 tsp fresh dill, chopped
1 tsp white sugar
1/4 tsp black pepper
1/4 tsp celery salt
Mix all the ingredients, except salmon, together. Allow the flavours to meld in the fridge for at least an hour. About 10 minutes before you serve it, mix the salmon in and allow it to sit. (The lemon-vinegar marinade cures the raw fish.) Serve with crostini, crackers or toasted bread. (For food safety, itâs very important to serve this dish of raw fish very fresh.) Yield: 2 servings.
