Wild Duck with Apple Stuffing

3 ducks
6 cups croutons
1 cup cubed, unpeeled apple
1/2 cup of raisins
3/4 cup butter or margarine,
2 tsp salt
1/2 tsp pepper
1/4 tsp cinnamon
1/8 tsp ground ginger
Preheat oven to 450°F. In a mixing bowl, stir together all stuffing ingredients. Stuff the ducks; truss. Place ducks breast side up on a rack in a roasting pan. Roast, uncovered, for 15 min. Reduce heat to 350°F. Lightly cover ducks with foil. Roast, allowing about 20 min. per pound to reach an internal temperature of 190°F.
