BBQ Ribs

4 pork side-rib racks
5 cups demerara sugar
1/4 cup cinnamon
1/2 tsp nutmeg
2 tsp celery salt
1/4 tsp cloves
1/2 tsp allspice
1 1/2 tsp chili powder
1/2 tsp cayenne
2 tsp garlic powder
2 tsp onion powder
1/2 tsp mustard powder
1/2 tsp chili flakes
1 tsp salt
1/2 tsp black pepper
1/2 tsp coriander
1 tsp cumin
BBQ sauce (your favourite)
Mix together all ingredients (except ribs and BBQ sauce). Divide the mixture into four portions. Set out a piece of foil about 3 feet long and sprinkle one quarter of one spice mix portion on it. Lay rack of ribs on it, meat side up. Put the remaining three quarters of the spice mix portion on the meat side. Wrap rack in the foil, then wrap again in a second piece. Repeat with other 3 racks. Place the wrapped racks on a sheet pan and put them in the fridge overnight. Next day, preheat the oven to 300F and bake the ribs for 2 1/2 to 3 hours. Remove from oven and allow them to rest in the foil until the BBQ is preheated on medium-high. Spray the grill well with non-stick spray, unwrap the ribs and place them on the grill meat-side down. Once the spice mixture starts to caramelize a little, flip ribs over carefully and brush the meat with BBQ sauce, then flip them back over. Brush the other side and flip them back once the sauce caramelizes. Cut the rack between each rib and serve with your favourite BBQ sides. Yield: 10-12 servings.
