Salmon Casserole

3-4 lbs salmon fillets
6 potatoes
1 can cream of chicken or mushroom soup
1 med. onion, chopped
salt and pepper, to taste
cheddar cheese, grated
Remove skin from salmon fillets and boil with potatoes for 10-15 min. Drain water; mash together potatoes and salmon. Add soup, onion, salt and pepper. Mix together and put in casserole dish. Top with grated cheese and bake at 300°F for 30 min. (This recipe also works well with cod fillets.)
