Pinwheel Wraps

8 (12") flour tortilla wraps
1 cup mayonnaise or salad dressing
24 slices of sandwich meat (lean turkey/beef/ham/chicken)
16 large leaves of iceberg lettuce
32 thin slices of tomato
1 cup shaved red onion
2 cups old cheddar cheese, finely grated
Dividing the ingredients equally, follow these steps for the first wrap. Spread 2 tbsp mayonnaise on tortilla, keeping it an inch away from the edges. Layer the rest evenly on the tortilla in this order: 3 meat slices, 2 lettuce leaves, 4 tomato slices, 2 tbsp onion, 1/4 cup cheese. Begin to roll up the tortilla starting at the edge closest to you. Make sure it's snug, secure it with a toothpick and slice off 1" thick pieces. Repeat with remaining 7 tortillas. Yield: 8 wraps, 10-12 slices per roll
