Zucchini Chocolate Mocha Cake

4 eggs
3/4 cup vegetable oil
1 tsp vanilla
2 cups grated zucchini
1 (4 1/2 oz.) chocolate instant pudding
1 1/2 tsp instant coffee
1 chocolate cake mix
Beat eggs slightly. Add oil and vanilla. Beat until smooth. Add zucchini and chocolate pudding; mix thoroughly using mixer on low speed. Add coffee and cake mix, and blend until moistened. Continue mixing on medium speed for about 5 min. Bake at 350°F for 1 hour 10 min. Cool cake in pan for 10 min., then remove from pan and let cool on rack.
