Cod Stew

2 cups onion, sliced thinly
1 cup carrot, grated
1/2 cup celery, sliced thinly
1 1/2 cups sweet potato, small dice
1 tsp fresh thyme, chopped
2 tbsp extra virgin olive oil
2 L fish stock
1/4 cup cornmeal
4 cups cod fish, 1 inch cubes
Salt pepper
Sweat vegetables and thyme in oil over medium heat, until the onion is translucent. Add stock and cornmeal. Allow to simmer for 20-25 minutes, stirring occasionally to prevent the cornmeal from sticking to the bottom. Add cod and simmer 5 minutes. Season to taste with salt and pepper. Yield: 4 servings
