Grilled Peach & Coconut Cream Tart

12 small tart shells, prebaked
1 can sliced peaches, drained and dried
1/4 tsp salt
1/8 tsp cayenne pepper
Cream Filling
3/4 cup sugar
2 tbsp cornstarch
1/2 tsp salt
4 egg yolks
2 cups milk
1/2 vanilla bean, scraped
1 tsp lime zest
1/4 cup toasted coconut
For the cream filling Sift together the sugar, cornstarch and salt. Whisk in the egg yolks. Scald the milk with the vanilla bean and zest. Temper the egg mixture with the hot milk (pour a little milk into the egg mixture first) and return it all to the heat. Cook over medium heat, stirring constantly until the mixture thickens fully. Stir in the coconut and allow to cool completely. Fill the tart shells.
For the peaches Preheat the BBQ/grill. Mix the salt and cayenne into the peaches. Once the grill is hot, coat the grill with cooking spray. Grill the peach slices on both sides and arrange on the filled tarts. Yield: 12 tarts
