Pizza Flips

4 lbs bread dough, divided into 12 equal balls
36 pieces of pizza meats (12 - ham, salami, pepperoni)
1 1/2 cups red onion, small dice
1 1/2 cups mushrooms, small dice
1 1/2 cups bell peppers (any kind), diced small
1 1/4 cups pizza sauce
1 1/2 cups mozzarella cheese, grated fine
Preheat oven to 350F. Mix onion, mushrooms and peppers together in a bowl. Once the dough balls are near room temperature, flatten them out in circles approximately 7"-8" in diameter. Spread 1 1/2 tbsp of pizza sauce on each dough circle, leaving 3/4" around the edge free of sauce. Brush this bare edge lightly with water. Cover the sauce with 2 tablespoons of cheese and arrange the meats (3 slices of each) and veggies (2 tablespoons) over one half of the circle. Fold the other half of the circle over to create your pizza flip. Press edges with a fork to seal. Poke a couple holes in the top for steam to escape. Place flips on a parchment-lined pan and bake until golden brown, approximately 20-30 minutes. Yield: 12 flips
