Pulled Bear Sandwich

4 lbs bear meat
2 tbsp bacon grease
2 cups onions, thinly sliced
6-8 fresh focaccia buns, split for sandwiches
BBQ Sauce:
1 (5oz) tin tomato paste
1 cup balsamic vinegar
1 cup dark brown sugar
1/4 cup Worcestershire sauce
1 tbsp fresh garlic, minced
1/2 tsp smoked chili powder
2 tsp whole grain mustard
1 tsp onion powder
1/2 tsp black pepper
1/2 salt
Add all BBQ sauce ingredients to a heavy-bottomed pot and bring to a boil. Once it boils, reduce to simmer and cook for 10 minutes. Remove from heat and set aside.
Heat the bacon grease in a deep saute pan over medium-high heat and sear all sides of the bear in the bacon grease. Remove meat, add onions and saute until they start to caramelize. Return meat to the pan, along with any juices that may have been released. Add BBQ sauce and turn the meat to coat. Bring to a gentle simmer and cook (covered) for 1-2 hours. Periodically check to ensure that the sauce hasn't reduced too much. If necessary, add a little hot water to make sure it stays "saucy." Shred the meat with forks, remove bones and ensure meat and sauce are thoroughly mixed.
Equally divide the meat between the buns and serve as is, or top with crispy fried onions or coleslaw. Yield: 6-8
