Veggie Pizza

3 flatbreads, large
2/3 cup pureed asparagus
3 tbsp pine nuts (toasted)
1 clove garlic, minced
1 tsp fresh basil, minced
2 tbsp milk
1/4 cup fresh Parmesan, grated
Salt pepper to taste
3/4 cup red onions, sliced thin
1/2 cup each of red yellow bell peppers, sliced
3/4 cup spinach, chopped
1 cup feta, crumbled
Preheat oven to 375F. Blend all sauce ingredients together in a blender/food processor. Spread equal amounts of the sauce on the three flatbreads. Divide the toppings between the three pizzas and bake for 15-20 minutes (cheese will start to turn golden and crust will begin to crisp).
Yield: 3 personal size pizzas
