Beef Palomilla

4 tbsp extra virgin olive oil
6 (6 oz) steaks, pounded to 1/4" thickness, salt pepper on both sides
2 limes (juice and zest)
5 garlic cloves, minced
6 tbsp butter
Heat half the olive oil in a large frying pan over high heat and sear steaks very quickly. They should have a slight crust on both sides, and the process shouldn't take more than 2-3 minutes per steak (add more oil as needed). These will not be well done. After the last steak has cooked, reduce the heat to low, add the butter and garlic and swirl the pan to help melt the butter. Add the zest and turn the heat to high again. Deglaze the pan with the lime juice, swirl again to mix in the juice and remove from heat. Season to taste and pour over the steaks. Serve with rice and veggies.
