Trout Foil Packets

Total Time: 30 Minutes or Less

2 fillets of trout
1 lime, sliced
2 cups leeks, sliced thinly
2 tbsp butter
3 tbsp maple flakes
1/2 tsp cumin
1/2 tsp salt
1/2 tsp pepper
Aluminum foil
Mix all dry ingredients in a resealable bag for transport.
To Prepare: Fit a frying pan with a double layer of foil and place the trout in it, skin side down. Dot the butter over the fish and sprinkle the spice mixture evenly over the two fillets. Layer the lime slices over the top and wrap tightly in foil. Place over the fire and cook for about 20 minutes, or until the fish begins to flake.
Yield: 2 servings
