Pesto Cream Pasta

4 cups penne pasta, cooked
1/4 cup butter
1/4 cup shallots, small dice
1 red pepper, julienne
3 tbsp pesto
1/2 cup white wine
1 cup whipping cream
Melt butter over medium high heat in a large frying pan. Sauté shallots until they just start to become golden. Add red pepper and pesto. Once pepper starts to sizzle, deglaze the pan with wine. Add cream and cook until mixture is reduced by about 25%, then toss with pasta and serve immediately.
Yield: 2-4 servings
