Pesto Mussels

2 lbs mussels, washed
1/4 cup butter
1/4 cup shallots, small dice
1 tsp dried parsley
1/2 cup tomatoes, small dice
3 tbsp pesto
2 tbsp lemon juice
3/4 cup white wine
Heat butter in a large saucepan (big enough to hold the mussels) over high heat and sauté shallots in butter until they just start to change colour. Add the parsley, tomatoes and pesto. When tomatoes start to sizzle, add the mussels, lemon juice and wine. Cover immediately. Gently shake the pot occasionally and cook until the mussels have all opened (less than 10 minutes). Pour the mussels out into a large serving dish and pour the pot contents over top. Serve immediately.
Yield: 4 servings
