Beef Stroganoff

1-1 1/2 lb round steak or flank steak, cut in 1 1/2-inch strips, fat removed
1/2 tsp salt
1/4 tsp pepper
2 tbsp butter or margarine
1/2 lb fresh mushrooms, sliced
1/2 cup chopped onion
1/2 cup beef broth
1 tsp dried mustard
1 bay leaf
2 tbsp tomato paste
1 tbsp flour or cornstarch
2 tbsp water
3/4 cup low-fat plain yogurt
Rinse and pat steak strips dry with paper towel. Sprinkle with salt and pepper. Melt 1 tbsp butter or margarine in a nonstick frying pan. Add strips of meat. Cook and stir until brown. Remove meat from pan and set aside. Sauté onions in the same pan until golden brown. Remove and place with meat. Add remaining butter or margarine to pan and sauté mushrooms until tender. Return meat and onions to pan. Combine broth, mustard, bay leaf and tomato paste and pour over meat mixture. Cover and let simmer for 1/2 hour until meat is tender. Remove bay leaf. Make paste of flour and water, and stir into the sauce in pan. Add yogurt and heat through. Donít boil. Serve over rice or wide egg noodles.
