1/2 cup white sugar
1 3/4 cups water
1/2 cup red rhubarb, small dice
3 tart apples, washed and cored
1/4 cup lime juice
Mix water and sugar together in a heavy bottomed pot over high heat. Bring to a boil and boil for one full minute. Cool to room temperature. Pour into a blender with all remaining ingredients. Blend on high until everything is completely pulverized. Pour through a fine strainer, stirring occasionally. Ensure that it is completely strained and serve over ice. *Note: You can keep the remaining purée to use in baked goods such as muffins!
Yield: 20 oz.
