Chewy Granola Bars

1/2 cup rolled oats (quick oats)
1/4 cup coconut
1 apple, peeled and grated
1/2 cup sliced almonds
2 tbsp mini chocolate chips
1/2 cup puffed quinoa
1 egg white
1/4 cup maple syrup
1/2 tsp cardamom
Preheat oven to 325°F. Mix the first six ingredients together and set aside. Whisk the egg white until very frothy, then add the maple syrup and cardamom. Mix the wet ingredients into the dry and thoroughly combine. Press into a sprayed loaf pan and bake for 30 minutes, or until the edges are browned and the top starts to become golden. Remove from the pan, cut into six bars and return to the oven on a sheet pan for about 10 minutes to dry a
little. Remove bars from the sheet pan and cool on a rack. These may be stored in an airtight container in the fridge for 3-5 days or at room temperature for
2-3 days. Yield: 6 bars
