Crunchy Potato Balls

Total Time: 30 Minutes or Less

1 cup very stiff mashed potato
1 cup finely chopped fully cooked ham
½ shredded cheddar or Swiss cheese
1 tbsp mayonnaise
1 egg, beaten
1 tsp prepared mustard
1/8 tsp pepper
2 tbsp all-purpose flour
2 cups crushed cornflakes
In a bowl, combine mashed potato ham, cheese, mayonnaise, egg, mustard and pepper; mix well. Add enough of the flour to make a stiff mixture. Chill. Shape into 1 –in .balls ;roll in cornflakes. Place on a greased sheet. Bake at 350°f for 25 to 30 minutes. Serve hot
Yield; about 2 dozen or 30 balls
