Slo Cooker “Roasted” Chicken

Total Time: Under an hour

1 whole chicken (4-6 lbs),
fresh/thawed
1/2 cup hot chicken stock
1 large onion, roughly
chopped
2 medium carrots, scrubbed
and chopped
Dry Spice:
1 tbsp smoked paprika
1 tsp garlic powder
1 tsp onion powder
1 tsp cumin
2 tsp chili powder
1 tsp pepper
1 tsp celery salt
1/2 tsp salt
Mix all spice ingredients together and rub it all over the chicken. Place vegetables in the bottom of the slow cooker and lay the chicken on top of them. Add the chicken stock and set the slow cooker to âlowâ for 8 hours (internal temperature of the chicken should be 165°F, at least, when done). Serve with potatoes or rice and the slow cooker vegetables on the side. Yield: 4-6 servings
