Mapo Tofu

Total Time: 30 Minutes or Less

1 lb tofu, firm, cut in 1" cubes
1 1/2 lb ground beef
1 1/2 cups onion, chopped
3 cups vegetable stock
2 green onions, chopped
Marinade
3 tbsp black bean sauce
1 tbsp sambal
1 tbsp garlic chili sauce
2 tbsp sugar
3 tbsp soy sauce
1 lime, juiced
Mix all marinade ingredients together, add tofu pieces and marinate at room temperature for about 30 minutes.
Add ground beef to a frying pan (no oil) and sauté until cooked through but not browned. Add onions and let them cook while the meat browns. Once meat is brown and onions are starting to become translucent, add the tofu and all the marinade. Stir to combine and add the vegetable stock. Allow the mixture to simmer gently for about 10 minutes. Add green onions just before serving. Serve with a side of your favourite rice.
