Chocolate Cheesecakes

6 ready-made graham mini pie
crusts (or 1 large)
1 lb soft tofu
1/2 cup milk
4 tbsp maple syrup
1/2 tsp almond extract
1/2 tsp vanilla extract, pure
1/2 cup dark brown sugar
1 tbsp cornstarch
3 tbsp dark cocoa powder
Preheat oven to 325°F.
In a blender, add milk, maple syrup and extracts. Add dry ingredients, then tofu broken into small pieces. Blend at high speed until the mixture is smooth and becomes a thick liquid. Pour/scoop the mixture into the pie crusts, smooth it out, and bake for 20-30 minutes (centre should jiggle like set jelly). Allow to fully cool at room temperature.
Yield: 6-8 servings
