Banana Trifles

1 Swiss roll pastry
2 tbsp apricot jam
31/2 ripe bananas, peeled and mashed
Juice of half a lemon
2 tbsp sugar
1 cup custard
Candied cherries
Cut Swiss roll into thin slices. Spread jam on each slice. Combine bananas with lemon juice and sugar; mash. Spread a layer over the jam. Cover with another slice of Swiss roll and top with custard. Press down lightly and leave for 10-15 minutes so custard gets absorbed. Decorate with cherries. Serves 4-6.
